Cabernet-Sauvignon

Cabernet Sauvignon is the single most popular red wine grape in the world. From Bordeaux, this crossing of French Cabernet and Sauvignon has been exported throughout the world. It is often mixed with Merlot or French Cabernet to make strong, structured, complex wines that persist in the pallet, long after having been swallowed. This vine is rich in tannins making it good for aging but it must not be drunk too soon. It's most typical aroma is green pepper, when young it's cassis, blackberries, licorice and chocolate. The best of these wines come from Bordeaux, particularly on the left bank of the Gironde where it's more used than Merlot grape. Listrac-Médoc, Margaux, Moulis, Pauillac, Pessac-Léognan, St. Estephe and St. Julien are the grand quality appellations with a range of wines dominated by the Cabernet-Sauvignon. This grape can have great results in Napa and Sonoma in California or Australia, even if they are not as strong as the Bordeaux vintages.
