Brazilians drink red wine cold!

Hey wait a minute! I usually drink Beaujolais or Brouilly pretty cold. Ok not cold like fridge cold but 10°C is pretty good.

Wine and chocolate

I think that the best wines with chocolate are oxidised sweet wines like Maury or Banyuls. Particularly if it's bitter chocolate. Otherwise, sweet wines like Muscat are good with sweet chocolate.

What do you think about sparkling red wine ?

I've got some friends from Australia who drink sparkling red wine for Christmas (sparkling Shiraz). Is it a tradition? How does it get with food ?

Food and Wine

As far as I am concerned, I would say foie gras (duck liver) and old Cahors (South West tanic wine)... some goat cheese and white wine from Loire valley are also very nice. For me, the best matches are a wine with a local speciality.
